We’re pleased to offer our signature 28-Day Dry-Aged Beef Rib Roasts as the star of our 2025 holiday lineup. Available for purchase by-the-bone, each serving 2-4 guests, this is some of the most flavorful and tender beef we offer all year. The dry-aging process breaks down the fibers, eliminates water weight, and enhances the flavor, resulting in a rich nuttiness.

We’re also excited to offer Snake River Farms Beef Picahna Roasts, also known as Sirloin Cap or Coulotte. Served with a thin fat cap, this beef is extremely rich in flavor and takes well to a slow cook such as smoking or indirect grilling. Each roast weighs approximately 3 pounds and comfortably serves 8 guests. (Also available as individual steaks)

For those wanting something other than beef, consider Porchetta. This raw, ready to cook boneless pork loin & belly is stuffed with house made Italian Sausage & herbs and sold by the pound.

Of course, we have all cuts of Oregon raised lamb and pork as well as a large selection of game birds.
